It looks like a Flageolet got to be the coolest thing to whip out at a sessh though

That's a French Flageolet. It has four tone holes in front, two in back.
Just as muslims can only eat and drink with a certain hand, the French have one finger on each hand reserved just for wine and cheese, and can't use them to play instruments. So they use just two fingers and the thumb on each hand to play.
