Backstitching; what is it?
I’ve heard it mentioned in exalted company and I just nodded my head knowingly, the way you do, but what is it?

When you are sewing, the end of a seam will come undone if you do not anchor it firmly. To do that, it’s traditional to simply make a few stitches backwards–going back in the direction from whence you came. Hence, “backstitching.”
You can do the same thing when sewing by machine. You reverse it and stitch backwards a bit.

Please don’t be embarrassed, Denny! It’s nothing to be ashamed of! It’s just one of those cultural things, I suppose. I’ve been sewing since I got my first “Easy-Stitch Potholder Kit.” 
I would have thought more Irish would know what it was, though.
Also, backstitch or backstitching is one type of outline stitch in embroidery.
I don’t know why the drawing shows spaces between the stitches. That is not how I was taught to do it.
