I genuinely dislike conspiracy theories, if I may
say something serious. I'm sufficiently aware of
history to be convinced that, sooner
or later, if not today, tomorrow, the conspirators
will turn out to be wearing yamulkas.

It's not a bigoted statement about Jews at all. He's saying that historically, Jews have been victimized by so many conspiracy theories accusing them of vast schemes, that he sees no reason to believe that present conspiracy theories will not devolve in that direction.

I did enjoy that Angels and Demons book, more than Da Vinci code. Just read it last week. That had a nice full-blown conspiracy at the outset.

I have been watching the teevee show, Burn Notice. In it, the feds and crooks are also sweepingly efficient, unlike real life.
