It's made from what Anthony Bourdain likes to refer to as "nasty bits."
Scrapple is typically made of hog offal, such as the head, eyes, heart, liver, bladder, and other scraps, which are boiled with any bones attached (often the entire head) . . . . .
Commercial scrapple often contains these traditional ingredients . . .

In my salad days, I lived in oklahoma City for two years, and as an apartment dwelling, single, rakish and dashing and boyishly handsome lad with a winsome smile and flowing dark hair, all the older ladies in the restaurant at which I worked took to mothering me. During okra harvest (I think there's a state law in Oklahoma requiring anyone with a yard to plant okra), they felt sorry for me as I did not have a yard in which to plant okra and they would bring me bags of fresh okra and jars of pickled okra. I would thank them for it and take it home and toss it out, especially the fresh stuff.

One day, I left one such bag of okra on the front seat of the car while I stopped at the Piggly-Wiggly on the way home, and I must have left the door unlocked, because when I came back, someone had left me two more bags of okra.

Oddly enough, the only time I had Black Pudding in a Pan Dip (the other name for it) was in Scotland.

So yes, we have no black pudding.

Netherlands: Boerenkool met Worst (green cabbage mashed potatoes, gravy, smoked saucage). I'd walk many miles for that on a winter's day :-)
