How would you call them rivets that they use for bags? (I´m trying to find them on ebay)

Double cap rivets.
Length of stem will obviously depend on your thickness of leather etc.

In German you'd have to ask for "doppelt kalottierte Nieten", although I found that this expression seems to be obsolete.
