Turns out that my “Celtic Sounds” iOS app works on M1 Macs without me having to do anything special.
You can download it from the Mac App Store, free if you bought the iOS version, $9.99 for new buyers.

If you are in the App store in an Imac, choose "Iphone &Ipad apps" and Celtic sounds appears. Download it, and it runs perfectly (as far as I can tell) on an M1 Imac

That's right, if you have an M1 Mac, just download the iOS version. It will show up in your Applications directory.
