All my bagpipe influencers actually use a Redpipe. Eluveitie, TheSnakecharmer, and even that random cover I linked early in the thread. Honestly, given everything you've said, I would suggest getting a WARBL, it's a MIDI controller that can emulate all kinds of pipes, and vary sounds and scales and intonation and all.
