Found out that the fear of using chopsticks is called consecotaleophobia. I'm getting there.
Just contacted an online Japan-based shopper's guide because of a Tokyo chopstick shop that it featured; the guide's website has really good English, and since they invited comments or questions, I thought this source might be a good way to go - at least I might get the name for that particular style, if nothing else. They probably maintain contact with the shop in question, and it's a good bet that the shop would know what I'm talking about. Now we shall see. Maybe.
