Just to further update this story, my computer tried to do a brand new update update only a few days after I'd rolled back the last one, only to freeze at 52%. Luckily, after a hard reboot, it restarted to an automatic revert routine, but I hate knowing that my OS can automatically hijack my computer and potentially break things without my consent.
